Whether you’re driving by or just want to try something new at a
historic venue, head out to the Letter Drop Inn in historic Rosita,
CO. Rosita is a small town that originated back in the 1800’s during
the Colorado silver boom, and the Letter Drop Inn offers a quaint and
comfortable place to relax and take in the beautiful sights of the
Colorado countryside.
The Letter Drop Inn got its name because the building housed the
town’s post office prior to our opening of the restaurant. As a
monumental building in our town’s history, we decided to refurbish and
turn it into an amazing restaurant. The restaurant has a cozy, well
lit atmosphere and we’ve truly turned this old post office into a
great fine dining restaurant in Colorado.
We serve the finest food, have a full service bar and our kitchen
staff is passionate about the food that is put on the plates. Our fine
dining restaurant has a wide variety of food choices to satisfy all
appetites. All of our food is fresh and prepared to order.

dining prices and the quality of food and service is second to none.

Rosita was the first town in the hardscrabble mining district organized on November 15th, 1872. The name “Rosita” is a Spanish word meaning little, or small rose for the wild roses that grow here. By 1875 the town had over 1500 inhabitants, 3 churches, a bank, a couple of hotels and a dozen other businesses. The town was built around a natural spring that still provides water to this restaurant. The restaurant’s name was inspired by the fact that it is the building that housed the towns post office from 1947 until it closed in 1966.
