Rosita was the first town in the hardscrabble mining district organized on November 15th, 1872. The name “Rosita” is a Spanish word meaning little, or small rose for the wild roses that grow here.

By 1875 the town had over 1500 inhabitants, 3 churches, a bank, a couple of hotels and a dozen other businesses.

The town was built around a natural spring that still provides water to this restaurant. The restaurant’s name was inspired by the fact that it is the building that housed the towns post office from 1947 until it closed in 1966.
